Cilantro Scampi

Brad enjoys a good dish prepared with chipotles and this one always pleases.  I had never eaten chipotles until I met Brad, so I say thank you to him for the introduction.  We both love shrimp so all I can say is “this is a yummy combination.”  Try the J2 Winery Sauvignon Blanc with is recipe, since you will need a cup for the recipe, why not!  Better have an extra bottle just in case a party breaks out.

Total time approx. 30 minutes


  • 2 Tbsp. olive oil
  • 1 Lbs. large or extra-large shrimp peeled, deveined and dust with flour
  • 1 Tbsp. minced garlic
  • ½ Cup white wine like J2 Sauvignon Blanc
  • 2 Tbsp. unsalted butter
  • 1/3 Cup chopped cilantro
  • ¼ Cup fresh lime juice
  • 2 Tbsp. chipotle chiles in adobo chopped
  • Salt to taste


  1. Combine chiles, cilantro, salt and lime juice in a large bowl (set-aside).
  2. Heat oil in large sauté pan over medium heat and add shrimp, sauté for 2 minutes.  Stir in garlic and cook 30 seconds then deglaze with wine scrapping up bits on bottom of the pan. 
  3. Simmer until reduced by half about 2 minutes then stir in butter until melted. 
  4. Once shrimp are done add to mixture (set-aside earlier) and toss.   
  5. Serve as an appetizer or add steamed vegetables for a light dinner.

Serve with your favorite red wine.  Might I suggest a J2 Winery red wine . . . .
