Orange & Chipotle Pork Loin

We have had this recipe on many occasions and the pork loin is moist, tender with just the right amount of spice.  The cinnamon gives the loin an exotic Mediterranean fragrance, and deepens the flavor profile.

Prep Time: 10 min; Cook Time: 1 Hr, 20 min

Ingredients:

  • 2 lbs. Pork Loin trimmed
  • 2 Tbsp. Vegetable oil or olive oil
  • 2 tsp. Chili powder
  • 1 tsp. Ground cinnamon
  • 1 tsp. Kosher salt
  • 2 Tbsp. Chipotle in adobe sauce, minced
  • 1 Tbsp. Lime juice
  • ½ Cup Concentrated orange juice

Directions:

  1. Preheat oven to 400 degrees. 
  2. Combine chili powder, cinnamon, salt and rub on the pork loin. 
  3. Combine chipotles, lime juice, orange juice in a nonreactive bowl. 
  4. Heat oil in an oven proof sauté pan and sear pork on all sides until browned over medium-high heat.  Place loin in oven and roast for 25 minutes. 
  5. Remove loin from oven, brush with glaze and return to oven for 5 minutes and continue this process for about 30-45 minutes until internal temp is 145*. 
  6. Remove from oven and then tent for 10 minutes and serve.
